Lemon Glazed Angel Food Muffins

So light and airy, some might say these Angel Food Muffins taste like heaven. Dip the top of the muffins in lemon glaze for added sweetness and flavor.

Ingredients

Servings: 18 muffins

Angel Food Muffins

  • 4 cups egg whites, room temperature
  • 1½ tablespoons cream of tartar
  • 1 teaspoon salt
  • 750 grams Domino® or C&H® Bakers Special Sugar
  • 1 tablespoon vanilla extract
  • 1½ teaspoons almond extract
  • 350 grams cake flour, sifted
  • 2 tablespoons Domino® or C&H® Sanding Sugar

Lemon Glaze

  • 1½ cups fresh lemon juice
  • 2 lemons, zested
  • 3 lbs Domino® or C&H® Powdered Sugar

Instructions

Angel Food Muffins

Step 1: Bring egg whites to room temperature. Add cream of tartar and salt, then mix to foam. 

Step 2: Rain in bakers special sugar and whisk to medium soft peaks – peaks will flop over.   

Step 3: Reduce mixer speed to low and add extracts.  

Step 4: Add flour and mix only to combine.  

Step 5: Fill each muffin tin and sprinkle with sanding sugar.

Step 6: Bake at 325°F on low fan for approximately 25-26 minutes. 

Lemon Glaze

Step 1: Prepare glaze by mixing lemon juice, zest, and powdered sugar by hand with a whisk. 

Step 2: Dip muffins in the glaze to cover the top of each muffin. Allow to fully harden.
