Lemon Blueberry Happy Hour Sno-cone

Blueberry Syrup - Yields 2 1/2 cups
- 1 cup Domino® or C&H® Granulated Sugar
- 1 cup water
- ¼ teaspoon lemon zest
- 1 cup fresh blueberries

- ¼ teaspoon lemon zest
- 0.5 ounce freshly squeezed lemon juice
- 1 ounce blueberry syrup
- 2 ounces lemon vodka
- 1 scoop (#8) shaved ice
Instructions
Blueberry Syrup
Step 1: Place water, sugar, and lemon zest in a small saucepan over medium heat. Stir occasionally until all the sugar dissolves. Bring to a simmer. Add blueberries. Lower the heat and simmer for 5 minutes. Strain the mixture and cool completely. Syrup can be kept in the refrigerator up to 5 days.

Step 1: Combine all ingredients except ice together in small pitcher. Scoop ice into sno-cone cup and pour mixture over.
Option: Mixture can be shaken with ice in bar shaker and strained into chilled martini glass.

Garnish with a twist of lemon and frozen blueberries in a glass.
